The origin of the olive oil production is to be found on the shores of the Levant.
Throughout the region comprising Syria, Lebanon and Israel, began wild olive oil
extracted.
Olive oil is a vegetable oil cooking used mostly extracted from freshly harvested
olive fruit called the olive or olive. The oil is extracted from ripe olives of six to eight
months, just when they contain the maximum amount of oil which usually occurs in
late autumn when the olive is the highest level of fatty acids, where almost a third of
the pulp of olives oil. Collected olives are transported to a facility in which olive oil
extracted by pressing. Olives undergo a first pressure by a mill in order to extract
the juice, oil quality largely depends on subsequent processing. For this reason,
producers monitor these steps carefully. Quality olive oil is judged by its
organoleptic properties and by its content of free fatty acids.
To obtain a quality olive oil must be processed within 24 hours of collectionToday
olive oil is sold packaged in bottles (glass or plastic), as well as in drums protected
from light. The world's largest producers are in the vicinity of the Mediterranean
Sea, Spain is the world's largest producer.
It is totally necessary to collect, transport and process "separate" the fruits fallen
on the ground and pinned the olive tree, or flight, since small amounts of fruits of
the soil can alter significantly the collected olive, if mixed for processing.
